Quick and Easy Recipes Please!

And I am talking about cooking for dummies! Nothing fancy. I need some recipes that sound good enough that a kid will actually eat it but an adult can also stomach it as well. But most of all, healthy and tasty. I am trying to make out my grocery list and I'm BORED with all my old recipes and finding nothing on google that I haven't already used or that doesn't sound like... weird... I found something using pears? Ew.... Oh yeah, these recipes need to be for dinner.

Chicken Pie:

2 x sheets of puff pastry
1 x 420g tin of condensed cream of chicken soup
500g of frozen veges (I usually use ones that have been chopped up pretty small)
1 cup of shredded chicken

Place one sheet of puff pastry into the bottom of a pie dish. Mix together chicken, soup and veges (make sure veges are defrosted) pour into the pie dish. Lay second sheet of puff pastry on the top using a fork around the edges to seal it. Cut three slit in the top of pie. Bake in 180c (356F) oven for about 30 mins or until top of pie is golden brown and crispy.

I make this all the time and the kids love it and so do that adults, it's really quick and easy to make too smile

EDIT: Where I have written g that stands for grams (not sure how you guys measure over there)

Thanks AnieLies. There's one recipe I see right on the front page I've been looking for that they've been advertising in their commercials. That cheesy chicken casserole dish. I thought they'd have it on the back of the label or something but no matter what can I looked at, it wasn't there.

I would still check your local book store out.  They have a recipe book that should be shelved in like casseroles that has lots of simple stuff in it.

Also, try the kids section.  There's usually a whole slew of kids cookbooks.  And kids are always more inclined to eat it if they helped cook it.

Well books are something I can't afford now, but I do live close enough to a library. If weather permits sometime this week I'll make a trip down there with the kids and see what they have. I haven't been there yet so I don't know what they have or don't. o.o;; My shopping list for now is pretty good, it has to be small so I can fit things into the stroller. We always walk to the store since we live so close to save on gas. Make mini trips! But I'll make sure a trip the library comes before I need to make a new list. That is a good idea.

But keep whatever recipes you all have coming in the meantime. ^_^

And I just found a really interesting recipe! I seriously wanna try this! I know it doesn't fit in with healthy, but it's just so off the wall that I want to try it. o.O What could I add to it to make it a little healthy? LMAO

There's a recipe book that involves cooking with only three ingredients. It's called "The Best of Cooking With Three Ingredients" by Ruthie Wornall, published in 1998. I love that book - it's just extremely quick, and uses only three ingredients. She's done an entire series, and I think she's also got a two ingredient one as well.

There's another healthy one: "Healthy 1-2-3: The Ultimate Three-Ingredient Cookbook, Fat-Free, Low Fat, Low Calorie" by Rozanne Gold. This one is way more recent.

Yeh I have 2 cook books called "4 Ingredients" by Rachael Bermingham and Kim McCosker.

It is an Australian book though so I don't know if you can get it over there, they have recipes using only 4 ingredients or less. Basically everything I cook comes from these two books smile

i have lots of yummy quick recipes since i hate to cook. the best place to go is websites for certain brand foods, they want you to use their products, so they make their own recipes. campbell's, and betty crocker have fantastic recipes. the cheesy chicken and rice casserole is yummy, as well as the chicken pot pie. you can also search using ingredients you already have on hand.

This is not quick, but it's very easy.  Plus, you don't have to hover over it - just stir once in a while, and test the beans.
This may take all day on the stove, depending on the softness of the beans.
 
My Version of Beans and Rice:
1 lb. pinto beans (soak overnight - don't forget!), rinse and drain.
1 lb. chopped onions (could add garlic if you have it too)
1 lb. diced pepperoni (buy a chunk from deli then dice)
Salt, pepper, desired herbs / hot sauce to taste.

1. Boil big full pot of water.  Add beans and onions.  Reduce to medium boil.  Stir enough so nothing burns. 
2. When water is about half gone, fill it up again.  Bring to boil, reduce to medium boil.  Don't forget to stir once in a while.
3. Repeat step two until beans are just about done, don't know how long that is - a few hours at least.  Bite one, to see if it's almost there...
4. Add pepperoni *before* your last fill up of water, and boil until water's about 1/3 to half gone.
Season to taste.
It should look like brown soupy mess when you're done, the onions will have dissolved, mash up some of the beans to make it thicker.
Yummy over rice, and as a soup big_smile

I thought of this...

White Wine
Prawns (Big ones)
Soy Sauce
Salt
Butter
Parsley or any other herbs you would like to garnish/decorate the dish with

Soak the prawns in white wine for 20 minutes,
then just transfer it to the frying pan (butter it first) and cook it while sprinkle some salt,
after you're done, pour in the soy sauce... You can add in any herbs around the plate...

Finished... I actually cook this dish for my family every Sunday... ^_^

Chi Chi's Old West Oven−Fried Chicken

1 jar Taco Sauce (8−oz.)
1 Egg
2 cloves Garlic, minced
2 cups Crushed Cornflakes
2 teaspoons Chili Powder
2 teaspoons Cumin
1 teaspoon Oregano
Dash ground Cloves
Crushed red pepper to taste (optional)
2 1/2 pounds Chicken Thighs
6 tablespoons Butter, melted

Preheat oven to 375 degrees.

In a shallow dish, whisk together taco sauce, egg and garlic. In a plastic or paper bag, combine cornflakes, chili powder, cumin, oregano, ground cloves and crushed red pepper if using. Dip chicken pieces in sauce; toss in cornflakes mixture; place on a greased shallow baking pan. Drizzle with butter; bake 45 minutes or until golden and tender, and juices run clear.

Outback Steakhouse Coconut Shrimp

1 1/2 lb large raw shrimp
1/2 cup all−purpose flour
1/2 cup cornstarch
1 Tbl. salt
1/2 Tbl. white pepper
2 Tbl. vegetable oil
1 cup ice water
oil for deep frying
2 cups short shredded coconut
1/2 cup orange marmalade
1/4 cup Grey Poupon country mustard
1/4 cup honey
3−4 drops Tabasco sauce

Peel, devein & wash shrimp. Dry well on paper towels. Set aside. In a bowl, mix all dry ingredients for batter. Add 2T oil & ice water.

Stir to blend. To fry: heat oil to 350 in deep fryer or electric skillet. Spread coconut on a flat pan a little at a time, adding more as needed. Dip shrimp in batter, then roll in coconut.

Fry in hot oil until lightly browned, about 4 minutes.

Bake at 300 5 minutes to finish cooking of the shrimp.

Serve with sweet & sour sauce or the following sauce: Combine marmalade, Grey Poupon mustard, honey & Tabasco sauce to taste.

One of my favorite healthy, quick dinners is soft tacos with ground turkey. Basically the only thing you need to cook is the ground turkey, and add a packet of taco seasoning. I also cut up lettuce, tomato, peppers, jalapeno if you like it a little spicy, put out cheddar cheese and salsa and burritos or tortillas of some sort. We make our own tacos so I basically have a taco salad with lots of the veggies and my husband uses the salad items as his taco garnish. For the kids you could use a little less taco seasoning if spices are a concern.

As much as I'm not her biggest fan the Rachel Ray cook books are great for quick recipes that don't require a lot of expensive ingredients.

Also, not sure where you live, but I think you're here in the states...Do you have a Trader Joe's near you? That is my go-to place for quick easy dinners. My daughter loves the gyoza and if I don't feel like truly cooking, those with broccoli or any asian veggie mix are really good. They also have turkey meatballs that are pretty decent and pre-marinaed fish and meats at very reasonable prices. We just had their citrus mahi-mahi the other day and the marinade was really good!

Oh, and I saw the above suggestion for searching by ingredients...One of my favorite websites is www.epicurious.com...It is the website for Gourmet and Bon Apetit magazines. You can search by ingredients you have on hand, which I do often! Or you can also search by ingredients and quick, healthy recipes. In the summer I love the No-cook option for recipes!

My favorite cookbook is the America's Test Kitchen cookbook. Apparently there is a TV show, too? Anyway, they have tested all of the recipes and made them pretty fool-proof. They also give tips on which are the best brands to buy (canned tomatoes, flour, etc). I use this book all the time.
I also use the Deceptively Delicious cookbook by Jessica Seinfeld. It is a bit more involved, because you are pureeing veggies to sneak into kid-friendly food but if you have the time, they are super yummy and nutritious.

I'm not a big fan of the "kid friendly" idea when it comes to food. I mean no, I'm not suggesting that you start feeding your kids offals as soon as they can eat solid food, but I think it's important to teach kids good eating habits as soon as you can, and that includes having them eat healthy and grown up things. I've noticed a lot of "kid food" tends to be much less healthy than other types of food (chicken nuggets, mac and cheese, etc).

Anyway, in regards to quick and simple meals, I think pasta is great. And you don't just need to do tomato sauce. You can cook up some pasta and just coat in a bit of good olive oil, and then let your family customize their pasta to their hearts content. I like to put artichoke hearts, garlic, chicken and sundried tomatoes in mine. My dad just likes tomato sauce with meatballs or sausage, my mom likes garlic and grated cheese etc. It might be a bit of prep work to heat up the extra things like meatballs and sausage, but I feel like this way everyone gets exactly what they want. No compromises, and everyone is happy.

I love soups and they are super easy to make.  Ranging from Brocolli Cheese Soup to Tortilla Soup to what I call Mexican Wastebasket.... you can easily double, triple the recipes and alter them to what you have on hand... and soups save so well, making for great left-overs. 

I have a George Foreman grill and this is the best investment.  Keep chicken breasts on hand.  When ever a recipe calls for chicken, I thaw it in the sink and season it however I need to for that recipe (sometimes just a bit of pepper) and throw it on the "grill" for a few minutes and then shred it.  You can put the chicken in ANYTHING. Casseroles, Soups... whatever. Makes cooking chicken easier.

Another easy thing to do is cook fajitas.  I always do chicken.  Marinate it in (there is no right thing to put in this- adjust the hotness and flavors to what your family likes) liquid smoke, pepper, red pepper, soy sauce or teryaki sauce. Grill on the grill or in a pan.  Cut into strips.  Cut up an onion and a green pepper and maybe a squash.  Throw a bit of olive oil in with them and some liquid smoke. Saute until tender.  Serve with tortillas, lettuce, tomatoes, cheese, sour cream... whatever you have.

I have thought of getting a Rachael Ray cookbook for a long time, her recipes look simple but her abbreviations are beyond me. But someone in the ninja thread helped me with what EVOO is. LMAO!! Maybe I can also put that on my Christmas list!

Pumpkin soup:
Peel and cut pumpkin, boil in a little quantity of water. When soft blend it, add condensed milk, you can also add a little bit of butter. Add also sugar (brown is the best for it) and cinnamon. Voila.

I haven't got children, but my friend's child likes it. It's quite easy to do, and if you don't add much sugar it's healthy, too, I think. Contains easy-assimilated vitamin A. You can add rice or dumplings to make it more filling.
