Cooking is my passion and I would love to be a chef one day... I am 17 now, from Serbia and in my country there is only 1 faculty with gastronomy and even there it is more about being a manager in gastronomy so I am pretty desperate to find sth out of my country. Last couple of weeks I have been searching all over the internet for appropriate scholarship but it is so hard to find anything.
Could you help me to realize my dream and just see if in your country there is a good faculty for gastronomy. (only Europe) Thank you smile

YESS!! I try to stick with gluten free most of the time. My body does not process gluten too well and if i eat it in excess i get really sick. I made up this really brilliant gluten free pancake recipe based off my other pancake recipe. How lovely to talk to another gluten free person!

@ Danica92 .... I pretty much love learning recipes from every chef, i really enjoy watching Iron Chef America (granted its the same 5 chefs over and over smile ) Curtis Stone makes some of my favorite (but pricey) kitchen supplies. I love his new oil container.

I quite enjoy cooking or baking when I have the time.

I made a stir fry for my lunch today, didn't have much time to do it though so used a pack of vegetables that were pre-cut. Came out pretty well!

I'd say my favourite recipe is a simple bread roll recipe - it's easy to make it into something a bit different by putting different herbs or cheese into it, or you can have it as the basic recipe. My favourite flavour combination I've made so far is sundried tomatoes, basil and cheese.

Another recipe I've made quite a lot is for a chickpea curry. I shall have to find the recipe soon and type it for you smile

I guess it's like an Indian curry. It has chickpeas, potatoes and some onions in a tomato based sauce. I have a rough idea where I've put the recipe, it's just finding the time to get it out and type it up. Should be here by the weekend smile

Sorry it's so late, but I didn't get round to posting this until just now.

Chickpea Curry
Ingredients:
~2 tablespoons Sunflower oil
~1 large onion, chopped
~2 tablespoons Curry Powder (I've found mild to be the best, but I guess it comes down to preference)
~400g can of Chopped Tomatoes with garlic in (if you can't get it with the garlic in just add a little of your own)
~350g of boiled potatoes cut into 1cm cubes
~400g can of chickpeas drained
~2 tablespoons of lemon juice
~Rice and naan bread to serve

Method:
1. Heat the oil in a saucepan, add the onion and cook until soft.
2. Add the curry powder and stir over a low heat for 1 minute.
3. Add the canned tomatoes and 50ml of water, cover and allow to simmer for 10 minutes.
4. Add the potatoes, chickpeas and lemon juice and simmer uncovered for a further 10 minutes.

It's as simple as that! big_smile

Have some cooking tips:
1) Humidity, light and heat will cause herbs and spices to lose their flavor, so store them in cool, dark places.
2) Add a little bit of salt to everything, it will bring the flavour out.
3) I usually add a about a teaspoon of vanilla to all desserts, somehow it just gives it a little extra something
4) Adding a teaspoon of coffee to chocolate desserts will make it taste richer, but it won't make it heavy.
5) Low and slow. A lot of people make the mistake of putting the oven on really high so the food will cook faster. This will just make it burned on the outside, undercooked on the inside.
6) Read the whole recipe before you begin.
7) Recipes are guidelines, not the bible. If you think you can replace an ingredient with a similar one, go for it.
8) To optimize the juice you get from a lemon or lime, roll it hard under your palm for a minute before juicing.
9) Clean as you go.
10) Chewing gum while chopping onions will stop your eyes watering.

I got these from different people, recipe books and the internet. I didn't copy/paste anything, though apparently you can find similar things on some sites.

Lola, do you think that would work in a crock pot. I like to use the slow cooker because I feel like it blends the flavors better. I definitely want to make that! I have chickpeas and pretty much everything in the pantry except for the curry powder.

I could see it working, it's definitely worth a try. You'd probably have to fry the onions and whatever spice you use off first and then add it in. I guess the potatoes wouldn't need to be pre-boiled either.

You'll have to try it and tell us how it goes. I might use that method in the future out of pure laziness tongue

Love those cooking tips, i do pretty much all of them. WIN. So I havent really tried anything new lately but tonight i'm making my super duper, extra special sloppy joes. Haha so, theyre basically regular sloppy joes with a big can of Bush's Baked beans added. (I feel like I've posted this before??) deja vu... anyway.. my favorite easy weeknight dinner.

I couldn't find curry powder so I bought some kind of curry sauce. I might use it with rice to make with a stir fry.

If you can't find curry powder then you can just buy a few different curry type spices. If you'd like I can go and get my pot and tell you what's in it smile Good luck with the stir fry, I do enjoy a good stir fry. I have a tip for them I learnt the other day by accident actually...
I used to make mine in a wok but the noodles and the vegetables would cook on to the bottom of it and it would be a nightmare to get clean. Anyway, one day I couldn't find the wok, so I used the most similar thing I could think of which happened to be a frying pan. Our frying pans are non-stick, and let me tell you, not one thing got stuck. So easy to clean tongue

Definitely going to have to try those fairy-tale mushrooms at some point! They look so cute and tasty smile

I actually don't like curry powder, it makes every dish taste the same! Plus, if you look at real Indian recipes, not a single one will say "curry powder", they use a large variety of spices. I cook lots of Indian/Middle Eastern/ethnic foods, so have pretty much every spice you can imagine except saffron (too expensive sad ), and a few other obscure ones.

Your food albums are amazing! I wish i cooked like that! so delicious, i really want to eat right now.
Tonight we are going out for my husband's birthday to an excellent cajun place not far from our house. Does anyone have a favorite cajun recipe? i have cooked shrimp étouffée once and it was completely amazing.
